Over the break I flew to Ecuador and one thing that I absolutely loved was their passion fruit. I visited a bakery while I was there and got a passion fruit cake multiple times. I loved it so much I wanted to find a recipe. This recipe is by Roberto Cuadra

    1. In a food processor or a blender, process Graham crackers with ¼ stick butter until the mixture looks like coarse sand. Place in the bottom of an 8-inch square or round mold, or in individual pastry rings, pressing to form a crust. Refrigerate.
    2. In a small saucepan, mix the unflavored gelatin with 2 tablespoons cold water and hydrate for 5 minutes. Melt over very low heat and reserve.
    3. Beat the condensed milk and cream cheese in a standing mixer –or hand held mixer- until very creamy. Add the heavy cream and continue beating for three minutes. Then add the passion fruit juice and the melted and cooled gelatin. Pour this mixture into the prepared mold. Refrigerate for at least 4 hours.
    4. In the meantime, make the topping. Mix the unflavored gelatin with 2 tablespoons water and let hydrate for 5 minutes. In a saucepan over medium heat bring the passion fruit juice with the sugar to a boil, then add the hydrated gelatin and heat until dissolved. Cool to room temperature and pour over the mousse. Refrigerate until ready to serve.
    5. Serve with strawberry sauce, whipped cream, and mint leaves. (Optional)
  1. To make the strawberry sauce, in a blender, process 2 cups strawberries with 2 tablespoons sugar and the juice of ½ lime. Strain and refrigerate until serving time.

Technology isolates you from what is going on in the real world and it can have a major effect on your brain. With social media comes false entertainment and acceptance. People turn to the internet for validation from others, which can be very dangerous. The opinions of other people can be very harmful and can take a toll on you. Exposure to technology at such a young age is harmful for a teen brain because it’s just developing. If you want kids to grow up self-sufficient and capable of making real connections. We have become too heavily reliant on technology to keep us entertained that we have stopped connecting with people on deeper levels. These conversations that we are missing out on are truly necessary to maintain complex relationships with others and oneself because they teach you about fluidity, contingency, and personality.

I am a visual learner and find it hard to follow along when someone is just talking. If something is visually represented it is 100x easier for me to understand it. The different types of learning came from different personalities. Everyone learns at different paces and forms, so different tools were created to accommodate different people.
